I would like to start deploying the 64bit version of Chrome, as long as I can patch it.

We are looking into this doesn't seem like there is a good way to differentiate between x86 and x64 for Chrome. Would the logic you would like is if x64 OS make x64 applicable and x86 for x86 Chrome?

Yes.  That would suffice.  A package for Chrome x64 on x64 machines and 32bit on x86.
